These are Shay's favorite! I got the recipe from his momma!
2 c. COLD cooked rice
2 eggs
1 T. sugar
Mix all together in a bowl and fry on hot, greased griddle just like you would a normal pancake.
Serve hot with butter and sugar or jam.
Makes about 8 pancakes...but they're very filling.
This is what I always make with my leftover rice after I've made hawaiian haystacks!

Au Gratin Potatoes
These are DELICIOUS!!! Much better than the boxed kind you can buy!
2 lbs. potatoes sliced thinly (about 6 medium potatoes)
1/3 c. diced onions. (onion powder can be substituted if you need to)
1/4 cup butter
1 T. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
2 1/2 c. shredded cheese
Combine onions and butter in saucepan over med. heat. Add flour, salt, and pepper. Cook, stirring constantly, until mixture starts to bubble. Remove from heat. Stir in milk and 1 1/2 c. cheese. Heat to boiling, stirring constantly. Pour cheese sauce over potatoes in ungreased casserole dish. Bake uncovered at 375 for 45 min - 1 hr. Pull out, sprinkle remaining cheese onto potatoes, and continue baking until cheese is brown and bubbly.
