Hot Crab Dip

Yet another from Paula Deen. I couldn't stop eating this one! It has a little kick.

1 lb lump crab meat, picked free of any shells
1 c. grated Pepper Jack cheese
3/4 c. mayo
1/4 c. Parmesan cheese
1/4 c. green onions, minced
5-6 roasted garlic cloves, minced
3 Tbs Worcestershire sauce
2 Tbs fresh lemon or lime juice
1 tsp hot pepper sauce or Tabasco
1/2 tsp dry mustard

Preheat oven to 325 degrees. Combine all ingredients into a casserole dish and gently stir until thoroughly mixed. Bake for 40 minutes. Serve hot with crackers.

Pumpkin Gooey Butter Cakes

Another Paula Deen favorite! This is so Yummy. It could easily take the place of pumpkin pie!

Cake:
1 pkg yellow cake mix
1 egg
8 Tbls butter, melted

Filling:
1 (8 oz) pkg cream cheese, softened
1 (15 oz) can pumpkin
3 eggs
1 tsp vanilla
8 Tbls butter, melted
1 (16 oz) box powdered sugar
1 tsp cinnamon
1 tsp nutmeg

Preheat oven to 350 degrees.
Combine the cake mix, egg and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 9x13 pan.

In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40-50 minutes. Make sure not to over bake as the center should be a little gooey.

Serve with fresh whipped cream.

Variations:
Pineapple: Instead of pumpkin, add a drained 20 oz can of crushed pineapple to the cream cheese filling. Proceed as directed above.

Banana: Prepare cream cheese filling as directed, beating 2 ripe bananas instead of the pumpkin. Proceed as directed above.

Peanut Butter: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of pumpkin. Proceed as directed above.

Sweet Potato Biscuits

I got this recipe from a Paula Deen cooking class I took at ISU.

3/4 c. mashed cooked sweet potatoes
1/4 c. milk
1/4 c. butter
1 3/4 c. all-purpose flour
4 TBS baking powder
2 heaping tsp sugar
1/2 tsp salt

Preheat oven to 450 degrees. In a large bowl, mix the potatoes, milk, and butter. In another bowl, sift together the flour, baking powder, sugar, and salt. Add the flour mixture to the potato mixture and combine to make a soft dough. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to one-half inch thick and cut with a round cutter. Place the biscuits on a greased pan and bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.)

O’ Henry Bars

From Melissa :)

6 c. oatmeal
1 c. melted margarine
1 ½ c. brown sugar
4 ½ tsp. vanilla
¾ c. white karo

Mix and spread on well greased cookie sheet. Bake 10 minutes at 375* Melt 1 package of milk chocolate chips and ¾ c. peanut butter in microwave or double broiler. Pour over oatmeal layer when cool.

Apple Kuchen

From Melissa, another yummy dessert:

1 Yellow cake mix
1 ½ tbsp. margarine
3 Tbsp. coconut
1 1 ½ large apples cut up
3 Tbsp. sugar
¼ tsp cinnamon
1/3 c. sour cream
1 egg

In 9x13 pan combine cake mix, coconut, margarine until crumbly. Put into pan. Arrange apple wedges on top. Mix cinnamon and sugar and sprinkle over apples. Whisk together egg and sour cream, drizzle over top of cake.

Bake at 350* for 35 minutes

Reeses Pie

From Melissa:

1 ½ c. half and half
1 pkg. Instant Chocolate pudding (small)
1 8 oz. cool whip
4 frozen reeses pb cups

Mix together half and half and pudding. Add cool whip and chopped up peanut butter cups. Pour into graham cracker crust and refrigerate until served.

Ritz Chicken

Melissa's version:

1 C. Ritz cracker crumbs
2 Tbsp. parmesan cheese
1 tsp garlic salt
½ tsp seasoned salt

4 boneless, skinless chicken breasts
1 carton plain yogurt

Coat chicken with yogurt then roll in crumb mixture. Lay in greased cookie sheet. Drizzle with ¼ c. melted butter.

Bake 350* for 45 minutes.

Turkey Lips

From Melissa (yummy, yummy, yummy!)

1 c. soy sauce
1 c. 7-up
½ tsp. garlic powder
1 c. oil
1 ½ lb chicken or turkey tenders

Marinate meat in mixture in fridge for 24 hours. BBQ on grill.

Breakfast Casserole

Melissa's recipe

1 roll cooked sausage
4 c. bread crumbs without crust
2 c. 2% milk
2 c. evaporated milk.
1 dozen eggs slightly beaten
1 tsp. salt
dash pepper
4 c. grated cheese

Mix and add sausage, cover and chill overnightBake at 350* for 45-60 minutes

Shay’s Mom's Roasted Chicken

From Melissa, Shay's mom is Carolyn VanOrden.

Put a whole chicken in a roaster bag in your roasting pan. Season well with poultry seasoning. (or salt and pepper to taste) Cut up potatoes very thin…and carrots. Top with 2 cans of cream of chicken soup. Close bag and cut a slit in the top. Bake at 350 * for about 25 minutes per pound of chicken. It makes it’s own gravy and has such good flavor! YUMMY!

Flaky Pull Aparts

From Melissa, our grand cook!

In a well greased bundt pan add:
2 pkg Grands flaky biscuits, separated and laying up on their side

Melt:
1 cube of butter
¾ c. sugar
zest from 1 orange

Pour over biscuits and bake at 350* for 30 minutes , or until brown on top. Remove from pan immediately so they won’t stick to bottom.

Carmel Apple Crepes

I wasn't too sure about this one, but it turned out so YUMMY! It was a big hit at the recipe exchange.

CREPES:
3/4 c. flour
1/3 c. milk
1/3 c. water
2 eggs
2 TBS sugar
4 tsp cooking oil

Place all ingredients in blender and mix until smooth. You may need to scrape the sides. Heat a lightly oiled griddle or frying pan over medium high heat. Remove from heat and pour or scoop the batter onto the griddle. Tilt the pan with a circular motion so that the batter coats the surface evenly. Place back on burner and cook the crepe for about 2 minutes, or until the bottom is light brown. Loosen with a spatula, turn and cook the other side.

SAUCE:
1 c. packed brown sugar
4 tsp cornstarch
1 c. whipping cream
2 TBS apple juice
1 TBS butter
2 c. thinly sliced apples

In large sauce pan mix all ingredients. (You may want to mix cornstarch into whipping cream so it does not clump.) Cook over medium heat until thick and bubbly and cook two minutes more.

Serve crepes with sauce rolled up inside or flat with sauce spooned on top.
Optional: top with whip cream or sprinkle with powdered sugar.

Easy Apple Crisp

From my friend, Mary Jo Noble, Wellsville, Utah.

8 applices, sliced
cinnimon, to taste
1 1/2 cups brown sugar
1 1/2 cups flour
1 cup softened butter
2 cups oatmeal
1 tsp salt

Place apples in greased 13 x 9 pan, sprinkle with cinnamon to taste. Mix the other ingredients then sprinkle on top of the apples evenly. Bake at 350 degrees for 450 minutes.

Chocolate Surprise Cookies


These are so yummy and so simple.

German chocolate cake mix
1/2 c oil
2 eggs
2 Tbs flour
Rolos or Reese's peanut butter cups (these are my favorite)
sugar

Mix cake mix, oil, eggs and flour. Mush around one piece of candy (enough so that the candy wont leak out, the carmel will stick). Then roll in sugar. Bake for 10 min at 350.

If using Rolos you should be able to get about 2 1/2- 3 dozen cookies.
