Wonderland Pancakes

These always turn out light and fluffy.

2 tsp. baking powder
1 c. flour
1/4 tsp. salt
1 egg
1 c. milk
1 Tbsp. oil
In a bowl beat together the egg, milk, and oil. Stir in the dry ingredients.
Makes about 12 pancakes

True Belgian Waffles

These are my family's very favorite breakfast! They're delicious!

2 c. flour
3/4 c. sugar
3 1/2 tsp. baking powder
2 eggs seperated
1 1/2 c. milk
1 c. butter ( no substitutes)
1 tsp vanilla
Combine flour, sugar, baking powder. In another bowl beat egg yolks. Add milk, butter, vanilla. Mix with dry ingredients. Beat egg whites to stiff peaks. Fold into batter. Makes about 10 waffles.

Sour Cream Almonds

Great for the holidays!

6 c. sugar
1 pint sour cream
*Cook until soft ball stage

2 T. vanilla
3 tsp. cinnamon
Mix in 5 lbs raw almonds. Stir until well coated then spread on waxed paper and break apart as they cool.

Pam's Peanut Butter Bars

These are my most favorite bar cookie! Shay could eat a whole pan by himself!

Cream: 3/4 c. butter, 3/4 c. sugar, 3/4 c. brown sugar, 3/4 c. peanut butter, and 2 eggs.

Add to above mixture: 2 c. flour, 2 c. oats, 3/4 tsp. soda, 1/2 tsp. salt, 2 tsp. vanilla.

Press into greased cookie sheet. Bake 350 for 12 minutes.

Immediately when you take out of the oven, pour 1 package chocolate chips on top and let melt. Spread eenly. When cooled, spread on frosting.

Frosting:
1 c. peanut butter
1 1/2 c. powdered sugar
1/2 c. butter
2 - 4 T. milk

Grandma VanOrden's Applesauce Cookies



2 c. flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. cloves
1/2 c. margarine or butter
1 c. sugar
1 egg
1 c. applesauce
chocolate chips
Combine dry ingredients in large bowl. Cream together butter, sugar and egg. Add dry ingredients alternating with applesauce. Mix until blended and add chocolate chips. Bake 375 for 10-12 min. Don't overbake

Perfect Pumpkin Pie

This is what I made for tonight for our Gourmet Dinner Club. It's the most different pumpkin pie recipe I've seen. It smells delicious AND the batter tasted yummy. I'll let you know how it goes.

1 9" prepared pie crust
1/2 cup toasted pecans
1/2 cup dark brown sugar
1/2 cup corn syrup
3 eggs
1 tsp cinnamon
1/4 tsp nutmeg OR 1 tsp freshly grated nutmeg
1 tsp ginger
1 1/2 cups pumpkin
1 cup heavy cream

Beat the eggs in a large bowl with an electric mixer until they are light and frothy. Add the brown sugar and corn syrup and beat until they are well incorporated. Mix in the spices.

Beat in the pumpkin and cream and mix until smooth. Fold in the pecans, if desired. Pour the batter into the prepared pie crust.

Bake for one hour and cool on rack.

Jello Squares

The marshmallow in this make it really yummy!

1 large box jello (any flavor)
1 pkg Knox gelatin
2 cups boiling water

Pour 1/2 water into jello, pour 1/4-1/2 cup marshmallows in remaining water.
Stir and melt jello and marshmallow water. When marshmallow are melted stir together. Make sure jello is completely dissolved. Refrigerate until solid.

Taco Soup

The best taco soup ever! And so easy. Thanks Julie!

2 cans of kidney beans (rinsed and drained)
1 can garbanzo beans (drained)
(the rest of these are not drained, just dump juices and all)
1 can corn
2 cans of stewed or diced tomatoes
1 can tomato soup
1/2 cup salsa
browned hamburger w/onions OR can of chili w/turkey meat
taco seasoning (to taste)

Mix it up and heat through!

Suggested toppings:
shredded cheese
Frito's
olives
diced tomatoes
guacamole
sour cream
(anything else you can think of)

Chili Cheese Dog Casserole

My friend Trisha Headman originally found this recipe on Allrecipes.com. We tweaked it a little bit and this is what we came up with:

8 hot dog buns
8 - 10 hot dogs
2 cans (15 ounce) chili (with or without beans, whatever your preference)
1/4 cup chopped onions
2 cups cheese

Preheat oven to 350 degrees. Lightly spray 9 x 13 pan with vegetable spray. Cut up buns into bite-sized pieces and place evenly in the bottom of the pan. Cut up the hot dogs into bite-sized pieces and sprinkle on top of the bun. Pour both cans of chili over the hot dogs, sprinkle on onions and cheese.

Bake for 30 minutes. Yummy.

Another variation:

Chili Cheese Dog Tater Tot Casserole

Substitute a bag of Tater tots for the buns. This is delicious. We even thought of cooking the tots separately so they are crunchy, warming the chili in the microwave and then assembling the dish right before you are serving. It might even be good with a cheese sauce over the top. Yes, this is extremely fattening, but it could be a Halloween tradition, you only have once a year!
